he wine has a delicate, bright red color that captivates the eye. A variety of floral aromas combined with delicate red fruit and a touch of oak. In the mouth, the wine is medium-bodied, soft and has a long presence with balancing acidity.

2023, 55% Grenache 40% Syrah 5% Marselan, Mechanically late at night, Ayalon Valley in the Judean Foothills Appellation.

Wine production process

The 2023 harvest was characterized by relatively elevated temperature in comparison to the previous harvest as well as the average climate parameters. In order to mitigate the fruit exposure to the direct sunlight, the vineyards were grown with a wider leaf canopy thereby increasing the shade and improving the fruit zone micro-climate.

Winemaking Process: The Grenache grapes were mechanically harvested and arrived at the winery during the early hours of the morning. After gentle crushing, the grapes fermented for approximately seven days at 25° C. Throughout the fermentation, varying pump-over regimes were carried out to achieve the optimal extraction of color, flavor, aroma and tannins.

Upon completion of the alcoholic fermentation the wine was gently pressed off of its pomace into another stainless-steel vat. The wine underwent malolactic fermentation, otherwise known as the secondary fermentation. This process softens and stabilizes the wine prior to entering its ageing period.

The Syrah and Marselan underwent similar vinification process. For each fermentation, temperature and pump-over regimens varied.

Upon completion of malolactic fermentation, the wines individually aged in used oak barrels for a period of 8 months. Towards the end of the ageing period, the barrels were tasted and the final blend was crafted.

Description of the Wine: This wine has a light red garnet color. Its aroma profile is laden with gentle red fruit and floral notes with light hints of oak spice. On the palate, this wine has a soft medium body, balanced acidity and a long finish.
