Dolcetto Essence

Barbera Essence is light red in color, with a medium body and with refreshing acidity typical to this variety. This wine offers a rich aromatic profile of violets, pomegranate, and mulberry with hints of hers and dried flowers.

Wine Details

100% DOLCETTO, 2023, The ESSENCE Dolcetto grapes are sourced from a vineyard located in the Golan Heights, 800 meters above sea level. With distinctive air currents that cool the vines during the evening the site offers a unique and ideal microclimate for ripening this variety. The unique soil profile is comprised of basalt volcanic soil mixed with grey clay. Green harvests were carried out during the season to ensure optimal cluster uniformity and enhanced aromatic and flavor concentration at harvest, Hand harvested in the early morning hours, From the day of release, though further maturation over the next few years will enhance complexity

Wine production process

The grapes were hand harvested in the early morning. Upon arrival at the winery the grape berries were separated form the stems without undergoing the typical crush. The grapes were transferred to chilled stainless-steel tanks to ferment at 22 degrees Celsius.
During fermentation, various cap management techniques (mainly remontage/pumpover) were employed to achieve optimal extraction of flavor, aroma, and color, with adjustments made according to fermentation stages.
The grapes were then gently pressed at low pressure into a stainless-steel tank, where the wine underwent malolactic fermentation, helping to stabilize and soften the wine.
Upon completion of malolactic fermentation, the wine was transferred into a used French oak wine tank of 5000 liter capacity, where it was aged for 12 months.
