//=$item['info_title']?> 100% Chardonnay, //=$item['info_title']?> 2019, //=$item['info_title']?> The grapes for this wine were harvested from a vineyard in the heights of the Judean Hills, 900 meters above sea level. The grape qualities of this Chardonnay are enhanced by the site's terroir including the cooler morning and evening temperatures. Additionally, the Chardonnay vines of this block were grown with lower yields after shoot and cluster thinning to enhance the quality of the fruit resulting in increased varietal typicity in the aromas and flavors of this win
Wine production process
The hand harvested grapes arrived at the winery in the early morning and were immediately pressed. The press was carried out gently under inert conditions, utilizing nitrogen to protect the array of aroma and flavors from the grapes.
The must was clarified via a flotation pump, a process which utilizes microbubbles of nitrogen to float the sediments to the top of the tank. The clear juice was racked off from the bottom of the tank to another stainless-steel tank for the onset of fermentation. After two days of fermentation, the wine was transferred to both new and used French oak barrels for the remainder of the fermentation and further ageing. Upon completing alcoholic fermentation, the wine was aged sur lie, leaving the wine in contact with the lees in barrel for approximately 7 months. Throughout the ageing period the lees were stirred up from the bottom of the barrel in a process known as battonage.
After bottling, the wine was aged in the winery for a short period prior its release to the market.
