100% Barbera, 2023, The Barbera grapes for ESSENCE are sourced from a vineyard with a unique and ideal microclimate. Located in the Ayalon Valley, in the Judean Foothills, the site benefits from distinctive air currents that cool the vines during the evening, following average daytime temperatures. Several green harvests were carried out during the season to ensure optimal cluster uniformity and enhanced aromatic and flavor concentration at harvest, Night-time mechanical harvesting, From the day of release, though further maturation over the next few years will enhance complexity.
Wine production process
The grapes were mechanically harvested in the middle of the night and arrived at the winery in the early morning hours. After a gentle crushing, the grapes were transferred to chilled stainless-steel tanks to ferment at 22 degrees Celsius.
During fermentation, various cap management techniques (mainly remontage/pumpover) were employed to achieve optimal extraction of flavor, aroma, and color, with adjustments made according to fermentation stages.
The grapes were then gently pressed at low pressure into a stainless-steel tank, where the wine underwent malolactic fermentation, helping to stabilize and soften the wine.
Upon completion of malolactic fermentation, the wine was transferred into a used French oak wine tank of 5000 liter capacity, where it was aged for 12 months.
