Wine production process

The grapes arrived in the early hours of the morning and were immediately gently pressed. The must was transferred to a chilled stainless-steel vat for 24 hours in order to clarify. After racking the clear must from the sediments, the juice began alcoholic fermentation under low temperatures to increase varietal aromas. After approximately five days of fermentation the wine was transferred to new French oak barrels to continue fermentation as well as further ageing. Upon completing alcoholic fermentation, the wine was aged with “sur lie” method in which the wine is left in contact with the lees in barrel for approximately 8 months. Throughout the ageing period the lees were stirred up from the bottom of the barrel in a process known as “battonage” which contributes to body and mouthfeel of the wine by way of yeast breakdown.
After bottling, the wine was aged in the winery for a short period prior its release to the market.
